Does Sabi have access to everything at once?

No. Under the hood, Sabi is a small team of specialists — an email specialist, a calendar specialist, and so on — and each one only gets the tools it actually needs. The email specialist can't touch your calendar; the calendar specialist can't send emails. If one piece were to ever get wonky, the error is contained and remedied quickly.
